Cheese and Squash Soufflé

For this recipe, you will need the following ingredients:

  • 1 tablespoon of butter
  • 1 tablespoon of extra virgin olive oil
  • 3 cups of dumpling squash cut into 1 inch cubes
  • 2 teaspoons of chopped fresh thyme
  • 1 shallot
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 1 slice of French bread
  • 1 ½ ounces of all-purpose flour
  • 1 cup of fat-free milk
  • Cooking spray
  • ¾ cup shredded cheese
  • 3 tablespoons of grated Parmesan cheese
  • 3 large egg yolks
  • 6 large egg whites

Making the Soufflé

  • Preheat a small roasting pan in the oven, set at 450°. Once the pan is hot, melt butter in it. Add the squash, the extra virgin olive oil, the fresh thyme, and the shallot.
  • Sprinkle the squash mixture with ¼ teaspoon of salt and pepper. Then toss and bake at 450° for 20 minutes. You’ll want to turn it once while it is cooking.
  • Let the squash mixture cool and then place it in a food processor. Process it until it’s smooth.
  • Scrape the squash mixture into a bowl.
  • Lower the oven temperature to 425° and place a baking sheet in the oven.
  • Drop the French bread into the food processor and use the pulse setting 10 times until you have find breadcrumbs that measure about ½ cup. Lightly coat five soufflé ramekins with cooking spray. Sprinkle the breadcrumbs over these dishes.
  • Lightly spoon flour into a dry measuring cup. Level it with a knife. Mix the flour and ¼ teaspoon of salt in a medium sauce pan and heat over medium. Slowly add milk, stirring regularly with a whisk. Bring this to a boil. Cook this for one minute until it is thick and bubbly. Remove from heat and let it stand for five minutes. Add the cheeses and stir until smooth. Then stir in squash mixture and egg yolks.
  • Next, place the egg whites in a large mixing bowl. Mix it at high speed until medium peaks form. Be careful not to over beat. Then stir in ¼ egg whites into the squash mixture. Gently fold remaining egg whites in.
  • Then divide mixture evenly through all of the prepared dishes. Tap the dishes on the counter a couple of times to get them level. These taps should be relatively sharp.

Place the dishes on the preheated baking sheet and then place them in the oven. Lower the temperature to 350° immediately. Now bake the soufflés for 45 minutes until they are golden, puffed, and set.

Now they are ready to be served immediately. Enjoy!
